Monday bloody Monday. That's how it goes, right? Well, aside from the false hope that I might accomplish all of my 5,679 goals that week, Mondays are no fun for me. Mr. Dub leaves for work again. I resume my household and life responsibilities, which I generally shirk for the weekend. Also, Baby Zee was born on a Monday so now the day has an even bittersweeter context.
So I decided to do something about it last week ... and it involves flour and two types of suga'. I'm talking about cookies, people. And I'm not just talking about any ol' crsipy choco-chipper. I'm talking about The Ultimate cookie - the kind that blows your mind and makes doubling the recipe a weekly necessity.
Last week, Miss Dub and I attempted to make the infamous Doubletree chocolate chip cookies. And while they were good, I'm wondering if my bootlegged recipe was the real deal. But I must say that it was awesome to always have cookie dough on hand to make a quick batch for friends.
Today, I'm thinking about some sort of Snickerdoodle. You know, like the kind they serve at Chino Bandido's Takeeoutee, which just happens to be featured tonight on Diners, Drive-ins and Dives.
Any good 'doodle recipes out there?
In fact, how about I make your Monday blogging even easier and ask ch'alls to link to your blogs, where you will post your favorite cookie recipe. And then, I will make it on a Monday. When I've baked my way through your recipes, whoever has The Ultimate Cookie recipe will receive deserved accolades on this here blog, along with a prize of some sort, which may or may not be cookies.

Ooooh, how easy for me. Alton Brown's puffy-cookie recipe is easily my fave. Use 1/2 choco chips and 1/2 peanut butter chips for the best combo!
The Puffy Recipe courtesy Alton Brown
1 cup butter-flavored shortening
3/4 cup sugar
1 cup brown sugar
2 1/4 cups cake flour
1 teaspoon kosher salt
1 1/2 teaspoons baking powder
2 eggs
1 1/2 teaspoons vanilla extract
2 cups semisweet chocolate chips
Hardware:
Ice cream scooper (#20 disher, to be exact)
Parchment paper
Baking sheets
Mixer
Heat oven to 375 degrees F. Combine the shortening, sugar, and brown sugar in the mixer's work bowl, and cream until light and fluffy. In the meantime, sift together the cake flour, salt, and baking powder and set aside.
Add the eggs 1 at a time to the creamed mixture. Then add vanilla. Increase the speed until thoroughly incorporated.
With the mixer set to low, slowly add the dry ingredients to the shortening and combine well. Stir in the chocolate chips. Chill the dough. Scoop onto parchment-lined baking sheets, 6 per sheet. Bake for 13 minutes or until golden brown and puffy, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool and store in an airtight-container.
Cookies and pictures of Miss Dub are a pretty good recipe for driving away any Monday morning blues...sugar, and spice, and everything nice.

I don't have a good snickerdoodle recipe, but I just found a coconut cookie I love. I'll post it next Monday, or maybe tomorrow, as I have already posted today. Fantastic idea!

Try this one... It makes a huge batch...so plan on giving some away.
Ultimate Chocolate Chip Cookies
1 lb. softened butter (I know it is a lot!)
3 eggs
2 tsp vanilla
2 1/2 cups sugar
2 cups brown sugar
1 1/2 tsp. salt
1 1/2 tsp. baking soda
6 cups all-purpose flour
4 cups chocolate chips
1 cups walnuts (walnuts)
Beat butter until smooth, add sugars, beat, add eggs & vanilla. Beat 3-4 minutes. Add dry ingredients & continue to beat. Fold in chocolate chips and nuts with a spoon.
Bake 8-10 minutes @ 350*- Do not over bake! Cookies will appear to be underdone.

These are the ultimate cookie. No kidding. They are orgasmically delicious.
Makes 112 cookies, so you may want to 1/2 it.
2 C butter
2 tsp baking soda
5 c. blended oatmeal
2 c. brown sugar
1 8 oz hershey bar grated
2 tsp baking powder
3 c chopped nuts
4 c flour
2 c sugar
24 oz chocolate chips
1 tsp salt
4 eggs
2 tsp vanilla
Measure oatmeal and blend in a blender to a fine powder. Cream butter and both sugars. Add eggs and vanilla; mix together with flour oatmeal salt baking powder and soda. Add choc chips hershey bar and nuts. Roll into balls and place 2 inches apart on cookie sheet. Bake for 10 minutes at 375.
Its a lot of work, but SO worth it. Happy baking!
Every summer while home from school my brother and his friends celebrated cookie Wednesday. They would gather at our house, bake a new kind of cookies, eat half, and then deliver the rest to whatever person they had chosen as the lucky recipient that week. It was adorable and very well received of course.
My husband is the cookie baker in our fam.... I will try and smuggle out his snickerdoodle recipe, it is his 13/14 yr.old Sunday School Class'fav. Unfortunately, it may not happen today, but it'll happen!
I've never posted a comment but had to share our yummy snickerdoodle recipe.
1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 tsp vanilla extract
2 3/4 cups all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
2 Tbsp white sugar
2 tsp ground cinnamon
-Preheat oven to 400 degrees.
-Cream together butter, shortening, 1 1/2 cups sugar, eggs and vanilla.
-Blend in the flour, cream of tartar, soda and salt.
-Shape dough by rounded spoonfuls into balls.
-Mix the 2T sugar and cinnamon. Roll balls of dough in mixture. Place two inches apart on ungreased baking sheet.
-Bake 8-10 minutes or until set, but not too hard. Remove immediately from baking sheet.
Enjoy!

I agree with Monday-loathing.
Baking always helps me feel happier. The process is a lot slower with an 18-mo cookie monster sidekick sticking her fingers in the dough and begging the beater. Admittedly, though, I had a genuine warm & fuzzy first mom moment when I offered my child the kitchen-aid beater to lick clean.
